The Holiday Bikini – How to Make It

WThis is a simplified interpretation of a cocktail featured on a new drinks list. It's a batch premix that's packed full of essence associated with holiday season, which makes it perfect for hosting a celebration. Save the extra syrup for breakfast cocktails, sweets, or for additional servings of bikinis.

The Bikini Cocktail

Makes enough for 10 guests

For the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

To prepare the Citrus Syrup: Place all the ingredients inside a pot, bring to a simmer, mixing so the sugar melts. Then, turn off the stove allowing it to cool completely. Pour into an sterilised bottle, close it keeping it in the refrigerator, where it will keep for up to a month.

To make Cocktail Base: Pour all the liquid ingredients into a sizeable container, let it rest for one hour, then filter it preferably using cheesecloth, making it perfectly clear.

For serving: Measure 85ml from the premix to a cocktail shaker packed with ice, gently stirring carefully for about 60 seconds to chill. Pour into an cold coupe glass or similar, decorate with some cranberries and finish with a light spray of the essential oil over the drink.
